What a dish! The Emile Henry high ceramic flan dish is the updated version of the brand’s classic fluted mould. Sleeker and more elegant, with tall, refined walls and a subtle wave pattern, it has a stunning design and generous capacity for all kinds of recipes.
The high-sided Emile Henry dish has become a gem among ceramic moulds.
Available in various sizes, its height makes it ideal for traditional shortcrust tarts, fluffy sponges that rise perfectly, brioches, cheesecakes... You won’t stop using it for all your favourite bakes!
Remember, it's a ceramic mould perfect for baking, so beyond sweet recipes, you can also use it to roast vegetables, meats and fish. And it’s so beautiful, you’ll always want to bring it to the table! It also makes a perfect serving dish for rice, pasta or even fruit.
Did you know...? It’s perfect for sponge cakes! Ceramic is a moist material that doesn’t dry out batters, making your cakes lighter. Bake in Emile Henry ceramic and taste the difference!
CLAUDIA’S NOTE ABOUT COLOURS: When Emile Henry ceramic is heated, its colours darken. Honestly, I can’t decide if I love them more at room temperature or straight from the oven – they’re gorgeous either way! The classic red becomes a deep garnet, the blue turns into a rich ocean tone... I think they were made to keep us baking nonstop!
24 cm (1.15 litres, 22 cm inside diameter, 1 kg), 28 cm (1.98 litres, 24 cm inside, 1.38 kg) and 32 cm (2.8 litres, 30.5 cm inside, 1.5 kg).
Shortcrust tarts, tall sponge cakes, brioches or cheesecakes. You can also roast vegetables, meat or fish in it and, as it is so pretty, serve rice or pasta at the table.
Because ceramic spreads the heat gently and gradually, right to the centre of the mixture, and doesn't dry it out like other materials. The same recipe comes out more tender and rises better.
Yes, it can go in the oven, the microwave and the dishwasher. Its vitrified ceramic resists cuts, so you can cut the portions inside.
The only thing ceramic doesn't like is sudden changes in temperature. When you take it out of the oven, set it on a rack, a wooden board or a tea towel rather than a cold surface such as the worktop, and don't put it straight from the freezer into a hot oven. It is also not for use directly on a flame or a hob.
It is normal: with the heat, the glaze darkens and the colours become more intense. Red turns almost burgundy and blue becomes an elegant ocean shade. As it cools, it returns to its usual colour.
10 years. It is made by hand in Burgundy, France: the same artisan who makes each piece checks and signs it. The ceramic contains no lead, cadmium or nickel.
