There are recipes that never fail, and this roast chicken with vegetables and honey is one of them. It is one of those complete, flavoursome and wonderfully rewarding dishes that practically cook themselves in the oven and always turn out well.

I particularly love it because it combines very simple ingredients — chicken, vegetables and a good marinade — yet the result is the kind you want to enjoy again and again. What's more, the touch of honey in the marinade adds a very special note, slightly caramelised, which together with the spices and the vegetable juices is absolutely delicious.

Ingredients

  • 1 fresh chicken (1.2 kg)
  • 1 leek, chopped (pieces approx. 1–1.5 cm)
  • 400 g whole carrots, washed and peeled
  • 400 g potatoes
  • 1 onion
  • 2 tomatoes

For the marinade

  • 100 ml olive oil
  • 1 tablespoon honey
  • 1 clove of garlic, grated
  • Sweet or smoked paprika
  • Cayenne pepper
  • Salt
  • Black pepper

Method

  1. Prepare the marinade by mixing together the olive oil, honey, grated garlic, paprika, cayenne pepper, salt and pepper.
  2. Clean and pat the chicken thoroughly dry, then coat it generously with the marinade.
  3. Peel the potatoes and onion, cut them into wedges and place them in the bottom of your Original-Profi Collection® Fissler stainless steel shallow casserole. Season with a pinch of salt and freshly ground black pepper.
  4. Cut the tomatoes into quarters and place them on top of the potatoes.
  5. Place the chicken on top and scatter the chopped leek and carrots around it.
  6. Place the covered casserole in a cold oven. Set the oven to 180 °C with top and bottom heat.
  7. After approximately 75 minutes, remove the lid and brush the chicken again with the remaining marinade. Return the casserole to the oven, this time without the lid, and cook for a further 15 minutes. This will make the skin nice and crispy.
  8. Remove from the oven and serve hot.

Sí, por supuesto. Puedes cocinar el pollo en cocotte; la única consideración es que, debido a la alta retención del calor del hierro, tal vez necesites menos tiempo de cocción.

Ingredientes

  • 1 leek, chopped (pieces approx. 1-1,5 cm)

  • 400 g whole carrots, washed and peeled

  • 400 g potatoes

  • 1 onion

  • 2 tomatoes

  • 1 grated garlic clove 

  • Sweet or smoked paprika

  • Cayenne pepper

  • Salt

  • Black pepper

Preparación

  1. Prepare the marinade by mixing the olive oil, honey, grated garlic, ground paprika, cayenne pepper, salt, and pepper.

  2. Clean and dry the chicken well, then coat or brush it thoroughly with the marinade.

  3. Peel the potatoes and the onion, cut them into wedges, and place them in the bottom of your Original-Profi Collection® Fissler stainless steel Shallow Casserole. Season with a pinch of salt and freshly ground black pepper. 
  4. Cut the tomatoes into quarters and place them over the potatoes. 

  5. Place the chicken on top and arrange the chopped leek and the carrots with the leek around it. 

  6. Place the covered Shallow Casserole in the cold oven. Set the oven to 180 °C with top and bottom heat.

  7. After approximately 75 minutes, remove the lid and brush the chicken again with the rest of the marinade. Return the pan to the oven, this time without the lid, and let it cook for another 15 minutes. This will make the skin crispy.

  8. Remove it from the oven and serve hot.
