La clave de un buen entrecot como el de esta receta de entrecot con mantequilla de queso azul está en el sellado, y eso solo se consigue de verdad con cast iron. La Lodge cast-iron grill alcanza temperaturas muy altas y, sobre todo, las mantiene de forma constante, algo esencial para marcar la carne correctamente desde el primer momento. Ese golpe de calor intenso crea una costra exterior que retiene los jugos en el interior y marca la diferencia en el resultado.

Empieza sellando el entrecot a fuego fuerte para conseguir ese dorado uniforme y lleno de sabor, termina la cocción en el horno hasta dejarlo en su punto y deja reposar unos minutos antes de servir (esto es vital para que la carne se relaje y los jugos en el interior se distribuyan por toda la pieza).

El resultado es una carne jugosa, bien marcada y con carácter, rematada con la mantequilla de queso azul fundiéndose poco a poco sobre el calor del entrecot. Una receta sencilla, pero con técnica, que realmente se nota en el plato.

Ingredientes

Para la mantequilla de queso azul:

  • 115 g de mantequilla sin sal, a temperatura ambiente
  • 115 g de queso azul desmenuzado
  • 1 cucharadita de salsa Worcestershire
  • Una pizca de sal
  • Pimienta negra recién molida

Para los entrecots:

  • 2 entrecots (tipo strip steak) de unos 2,5 cm de grosor
  • 1 cucharadita de aceite vegetal
  • Sal
  • Pimienta negra recién molida

Preparación

Prepara la mantequilla de queso azul:

  1. En un bol pequeño, trabaja la mantequilla hasta que esté cremosa.
  2. Añade el queso azul desmenuzado, la salsa Worcestershire, la sal y la pimienta, y mezcla de nuevo hasta obtener una textura homogénea.
  3. Coloca la mezcla sobre un trozo de film transparente (unos 30 cm), dale forma de cilindro y ciérralo bien retorciendo los extremos. Llévalo al congelador hasta que esté firme.

Para hacer los entrecots:

  1. Saca los entrecots de la nevera con antelación para que estén a temperatura ambiente.
  2. Precalienta el horno a 180 ºC y pon a calentar al fuego, a potencia baja, una Lodge cast iron skillet para que coja temperatura toda ella. Cuando esté bien caliente, úntala ligeramente con aceite.
  3. Colóca los entrecots en la sartén, bien caliente.
  4. Márcalos durante unos 2 minutos por cada lado, hasta conseguir un buen sellado.
  5. Salpimenta los entrecots por ambos lados y introduce la sartén en el horno y termina la cocción durante unos 2 minutos más.
  6. Saca la sartén del horno y coloca una rodaja de mantequilla de queso azul sobre cada entrecot y deja que se funda ligeramente con el calor.
  7. Deja reposar así la carne unos 5 minutos antes de servir, para que los jugos en el interior se distribuyan y quede super jugosa.

¡Trucos!

  • La mantequilla de queso azul se puede preparar con antelación y conservar en el congelador hasta un mes.
  • Hemos usado la sartén de hierro pero para un acabado aún más profesional, puedes usar la ridged grill, para un efecto Maillard ya absolutamente perfecto.
  • Hemos terminado la receta en el horno, pero puedes hacer todo el proceso en el fuego si lo prefieres.

    Preparación

      1. In a small bowl, work the butter until creamy.

      2. Add the crumbled blue cheese, Worcestershire sauce, salt, and pepper, and mix again until smooth.

      3. Place the mixture on a piece of plastic wrap (about 30 cm), shape it into a cylinder, and seal it tightly by twisting the ends. Transfer it to the freezer until firm.

      1. Take the entrecotes out of the fridge ahead of time so they can come to room temperature.

      2. Preheat the oven to 180 ºC and set a Lodge cast iron skillet over low heat so the entire pan heats through. When it is  very hot, lightly grease it with oil.
      3. Place the entrecotes in the skillet, once very hot.

      4. Sear them for about 2 minutes on each side, until nicely browned.

      5. Season the entrecotes with salt and pepper on both sides, place the skillet in the oven, and finish cooking for about 2 more minutes.

      6. Take the skillet out of the oven, place a slice of blue cheese butter on each entrecote, and let it melt slightly from the heat.

      7. Let the meat rest like this for about 5 minutes before serving, so the juices inside redistribute and it stays super juicy.
