Ingredients

Ingredients for the salad 

  • 4 small beets
  • Juice of half a lemon
  • 1 tablespoon extra virgin olive oil
  • Salt and freshly ground black pepper to taste
  • 150 g fresh mozzarella
  • 3-4 walnuts, shelled and roughly broken into pieces
  • A few fresh parsley leaves for garnish

Ingredients for the parsley pesto

  • 75 g shelled walnuts
  • 2 tablespoons lemon juice
  • 25 g fresh parsley
  • 1 crushed garlic clove
  • 50 g grated Parmesan cheese 
  • 10-12 tablespoons extra virgin olive oil
  • Salt (if needed)

Preparation

Parsley pesto preparation

  1. Put all the pesto ingredients except the olive oil into a chopper. Blend for a couple of minutes.
  2. Add the oil and emulsify at low speed. Process until the texture is smooth, but with visible pieces of walnut so it keeps a bit of crunch. If needed, add a little more oil.
  3. Taste the sauce and, if necessary, add a little salt. Put it in a bowl or gravy boat and refrigerate (cover it with some cling film or the lid of the gravy boat).

Salad preparation

  1. Wash the beets very well, cut off the ends, and slice them into spaghetti using the Spiralizer Zyliss espirilizador.
  2. Put the beet spaghetti in a salad bowl and add the juice of half a lemon, salt and freshly ground black pepper to taste, and the tablespoon of extra virgin olive oil. Stir well to combine everything and set aside.
  3. Drain the fresh mozzarella well so it releases all the whey, then tear it into pieces with your fingers.
  4. Add the mozzarella pieces to the spiralized beet and mix gently. 
  5. Take the pesto out of the fridge, stir it, and spoon several teaspoons over the beet and mozzarella.
  6. Add the chopped walnuts, garnish with a few parsley leaves, and serve immediately, with the rest of the pesto on the side.

Tips

  • If you have any pesto left over, you can keep it in the fridge for several days in an airtight container
  • You can make the pesto with hazelnuts, cashews, or peanuts, for example. You’ll see how well they pair with the beetroot.

Beetroot spaghetti salad with mozzarella and parsley pesto

Ingredientes

    • 3-4 peeled walnuts, roughly chopped

    • A few fresh parsley leaves for garnish

      1. Pon en una picadora todos los ingredientes del pesto excepto el aceite de oliva. Tritura durante un par de minutos.

      2. Añade el aceite y emulsiona a velocidad baja. Procesa hasta que la textura sea suave, pero que se aprecien trozos de las nueces, para que mantenga un punto crujiente. Si fuera necesario, añade un poco más de aceite.

      3. Prueba la salsa y, si hiciera falta, añade un poco de sal. Ponla en un cuenco o una salsera y reserva en la nevera (cúbrela con un poco de papel film o tapada con la tapa de la salsera).

      1. Lava muy bien las remolachas, corta los extremos y córtalas en forma de espaguetis con el espirilizador Spiralizer de Zyliss.

      2. Pon los espaguetis de remolacha en una ensaladera y añade el zumo de medio limón, sal y pimienta negra recién molida al gusto y la cucharada de aceite de oliva virgen extra. Remueve para que se mezcle todo bien y reserva.

      3. Escurre bien la mozzarella fresca, para que suelte todo el suero y córtala en trozos, pellizcándola con los dedos.

      4. Añade los trozos de mozzarella a la remolacha en espiral y mezcla con suavidad. 

      5. Saca el pesto de la nevera, remuévelo y reparte varias cucharaditas por encima de la remolacha y la mozzarella.

      6. Añade las nueces troceadas, decora con unas hojitas de perejil y sirve enseguida, acompañada con el resto del pesto.
