A clear example is the artichoke, which, besides its beauty, also boasts a delicious flavor and a bunch of beneficial properties for our body. With these artichokes with ham that I’m bringing today, I’m sharing a traditional Spanish recipe prepared in a pressure cooker, so that what’s delicious and beautiful is also quick and economical. A perfect recipe!

This dish is a classic that never goes out of style. Tastes or cooking methods may change, but if you want to save time and preserve most of the nutrients and vitamins in artichokes, there’s nothing like making it in a pressure cooker, like the WMF Perfect Premium, . You will have it ready in under 10 minutes.

Ingredients

  • 8 Whole artichokes
  • 100 g Serrano ham, finely diced
  • 2 Garlic cloves
  • 150 ml White wine
  • 100 ml Water
  • 4 Sprigs of parsley
  • 4 Thin slices of ham
  • 1/2 Lemon
  • Olive oil
  • Pepper (optional)

Preparation

  1. Prepare a bowl with 1 liter of cold water and lemon juice.
  2. Finely chop the garlic and parsley.
  3. Peel the artichokes, removing all the outer green leaves, and cut off the tip.
  4. Cut them in half lengthwise and remove the fuzz from the heart (if any); submerge the cleaned pieces in the lemon water so they don’t darken.
  5. Pour a splash of oil into the WMF Perfect Premium pressure cooker over medium-high heat, add the cleaned, drained artichokes and stir for a couple of minutes. Then add the diced ham and the chopped garlic-parsley.
  6. Sauté briefly while stirring and then pour in the wine and the water.
  7. When it starts to boil, put the lid on and close the cooker, without lowering the heat until the pressure indicator shows its second ring (on the PERFECT PREMIUM model, set the handle selector to position 2).
  8. When the pressure indicator shows its second ring, lower the heat to minimum and cook for 7 minutes.
  9. Once the 7 minutes are up, turn off the heat and let the pressure indicator of the WMF pot drop on its own until the cooking rings are no longer visible.
  10. Open the lid and serve immediately, placing a slice of ham on top of each plate as decoration.

Notes:

To prevent the artichoke from oxidizing without using lemon, you can use a small bunch of parsley, which you should squeeze into the bowl of water where you’ll submerge the artichoke pieces. This will avoid the slight acidic taste of lemon.

  • 1/2 lemon

  6. Sauté briefly, stirring, then pour in the wine and water.
  7. When it starts to boil, cover and close the pot, without lowering the heat until the pressure indicator shows its second ring (on the PERFECT PREMIUM model, set the handle selector to position 2).
  8. When the pressure indicator shows its second ring, lower the heat to minimum and cook for 7 minutes.
  9. Once the 7 minutes have passed, turn off the heat and let the pressure indicator on the WMF pot lower on its own until the cooking rings are no longer visible.
  10. Open the lid and serve immediately, placing a slice of ham on top of each plate as decoration.
